  1. 1. Cut the chicken sausages in half crosswise and thread the two halves lengthwise onto the six skewers. Note: If you use wooden skewers, soak them in water for about 15 minutes beforehand so they do not burn while grilling.
  2. 2. Peel the garlic clove and chop it very finely. Wash the zucchini and eggplant, trim the hard ends, and slice them into very thin, long strips using a vegetable peeler.
  3. 3. Lay several layers of kitchen paper on your work surface. Place the vegetable slices on top, sprinkle generously with salt, and let them sit for ten minutes.
  4. 4. Meanwhile, wash the sage leaves and shake them dry. Thread two leaves onto the top and bottom ends of the sausages on the skewers.
  5. 5. Pat the vegetable slices dry and stack one zucchini slice and one eggplant slice on top of each other. Season with pepper and sprinkle with the chopped garlic.
  6. 6. Roll the vegetable layers tightly into small rolls and place one on the bottom and top end of the sausage skewers.
  7. 7. Place the sausage skewers on aluminum foil trays or sturdy aluminum foil and grill them on the hot grate for 12 to 15 minutes, turning them several times.
