🍽️ Fried sausages with mashed potatoes and stewed apples

Ingredients
- 12 small veal fried sausages (or roast fried sausages)
- 2 tbsp clarified butter
- 2 apples (Golden Delicious)
- 2 onions
- 3 tbsp butter
- 1 kg potatoes
- 0.25 l milk
- 25 g butter
- salt
- pepper
- 0.5 bunch marjoram
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small, even pieces.
- 3. Cook the potato pieces in boiling salted water for about 25 minutes until tender.
- 4. While the potatoes are cooking, peel the apples and remove the cores.
- 5. Cut the apples into small cubes.
- 6. Peel the onions and slice them into thin rings.
- 7. Heat the butter in a large pan.
- 8. Sauté the onion rings briefly in the hot butter.
- 9. Add the apple cubes to the pan and stir them in.
- 10. Let the apple and onion mixture simmer for 7 minutes until the apples are soft.
- 11. Drain the cooked potatoes and press them through a potato masher while still hot.
- 12. Heat the milk in a small saucepan.
- 13. Stir the warm milk into the mashed potatoes using a whisk.
- 14. Add the soft butter in small pieces to the mash.
- 15. Season the mashed potatoes with salt and pepper to taste.
- 16. Keep the mashed potatoes warm until everything is ready.
- 17. Heat the clarified butter in a separate pan.
- 18. Fry the sausages firmly on all sides until golden brown.
- 19. Whisk the mashed potatoes briefly again to make them fluffy.
- 20. Spread the mashed potatoes onto the plates.
- 21. Place the fried sausages next to or on top of the mash.
- 22. Top with the stewed apple and onion mixture.
- 23. Garnish the dish with fresh marjoram leaves.
- 24. Serve the dish immediately while hot.
