🍽️ Pan-fried sausages with warm potato salad

Ingredients
- 600 g firm-cooking potatoes
- 1 onion
- 6 tbsp sunflower oil
- 250 ml vegetable broth
- 0.5 bunch radishes
- 4 tbsp white wine vinegar
- salt
- pepper (from the mill)
- Nuremberg roast sausages (ready-made product)
- oil (for frying)
Instructions
- 1. Peel the potatoes and slice them thinly.
- 2. Peel the onion and dice it finely.
- 3. Heat two tablespoons of oil in a pot and sauté the onions and potato slices briefly. Pour in the broth, bring to a boil, and simmer covered for about ten minutes.
- 4. Slice the radishes very thinly. Transfer the potatoes along with the cooking liquid to a bowl, add vinegar, salt, pepper, and the remaining oil. Fold in the radishes and let the salad marinate for about twenty minutes.
- 5. Pan-fry the sausages in hot oil over medium heat until browned all around. Serve the sausages and potato salad on plates.
- 6. Serve the dish with a side of fresh corn salad if desired.
