🍽️ Chinese-style Fried Noodles

Ingredients
- 250 g Chinese egg noodles
- 100 g Mu-Err mushrooms (dried)
- 250 g green asparagus
- 250 g broccoli
- 200 g green beans
- 4 tomatoes
- 1 onion
- 2 red chili peppers
- 6 tbsp oil
- salt
- 2 tbsp soy sauce
- 1 piece ginger (3 cm)
Instructions
- 1. Place the Mu Err mushrooms in a bowl and cover them with boiling water.
- 2. Wash the asparagus and trim off the tough bottom ends.
- 3. Boil the asparagus in salted water for 8 minutes.
- 4. Drain the asparagus.
- 5. Cut the broccoli into small florets.
- 6. Boil the broccoli florets in salted water for 3 minutes.
- 7. Let the broccoli drain.
- 8. Wash the green beans and trim the ends.
- 9. Boil the green beans in salted water for 5 minutes.
- 10. Drain the green beans.
- 11. Wash the tomatoes and briefly scald them with hot water.
- 12. Remove the skin from the tomatoes.
- 13. Halve the tomatoes and remove the inside.
- 14. Cut the tomatoes into wedges.
- 15. Add the egg noodles to a pot with plenty of boiling water.
- 16. Immediately remove the pot from the heat.
- 17. Let the noodles sit in the hot water for about 4 minutes.
- 18. Pour the noodles into a colander.
- 19. Rinse the noodles with cold water.
- 20. Let the noodles drain well.
- 21. Peel the onion and the ginger.
- 22. Finely chop the onion and the ginger.
- 23. Cut the chili peppers into small rings.
- 24. Place the onion, ginger, and chili in a mortar.
- 25. Crush the mixture in the mortar until fine.
- 26. Heat oil in a wok.
- 27. Add all the prepared vegetables to the wok.
- 28. Add the drained mushrooms to the wok.
- 29. Add the crushed mixture from the mortar to the wok.
- 30. Add the noodles to the wok.
- 31. Stir-fry everything over high heat while stirring.
- 32. Stir in the soy sauce.
- 33. Divide the noodles into bowls.
- 34. Serve the noodles hot.
