🍽️ Crispy Fried Potatoes with Olives and Feta

Ingredients
- 1 kg mostly waxy potatoes
- salt
- pepper (from the mill)
- 4 onions
- 4 tbsp olive oil
- 200 g sheep's cheese (feta)
- 200 g marinated olives (with garlic and herbs)
- parsley (for garnishing)
Instructions
- 1. Thoroughly wash and scrub the potatoes.
- 2. Boil the potatoes with the skin on in salted water for about 30 to 40 minutes.
- 3. Remove the potatoes from the water and rinse them briefly with cold water.
- 4. Peel the cooled potatoes.
- 5. Let the potatoes cool down completely.
- 6. Peel the onions.
- 7. Cut the onions in half lengthwise.
- 8. Slice the onion halves into wedges.
- 9. Cut the cooled potatoes into coarse cubes.
- 10. Heat the olive oil in a pan.
- 11. Fry the potatoes and onions until golden brown over medium heat.
- 12. Turn the potatoes and onions occasionally.
- 13. Season everything with salt and pepper.
- 14. Cut the feta into cubes.
- 15. Mix the feta with the olives into the potatoes.
- 16. Heat the mixture briefly.
- 17. Serve the dish garnished with fresh parsley leaves.
