  1. 1. Peel the onion and cut it into small cubes. Peel the potatoes and slice them into thin rounds.
  2. 2. Fry the potato slices in hot clarified butter for about 5 minutes until lightly golden brown. Add the bacon and onions and fry everything together for another 4 to 5 minutes. Season with salt, pepper, and cumin, and adjust the taste to your liking.
  3. 3. Crack the eggs into a second pan with hot oil and fry them as sunny-side-up eggs. Season them with salt as well. Divide the potato mixture among 4 small plates or pans, top each with one fried egg, and serve the dish sprinkled with chopped parsley.
