  1. 1. Place the potatoes in a pot with plenty of water and cook them for 25 to 30 minutes until tender. Alternatively, you can steam them in a steamer insert over boiling water.
  2. 2. Peel the onions, halve them, and slice them into thin rings. Rinse the cod fillet and pat it dry with kitchen paper. Drizzle the fish with lemon juice and season with salt and pepper.
  3. 3. Heat one tablespoon of olive oil in a non-stick pan. Fry the cod fillet for 2 minutes on one side until golden brown. Turn the fish, remove the pan from the heat, and let it rest for 5 minutes. Take it out, wrap it in aluminum foil, and set it aside.
  4. 4. Peel the warm potatoes and let them cool down. Then slice them. Heat the remaining olive oil in the pan and fry the potato slices for about 3 minutes on all sides until golden brown. Add the onion rings and fry them for another 3 minutes.
  5. 5. Wash the fresh herbs, shake off excess water, and slice them into thin strips. Remove the fish from the foil and break it into bite-sized pieces. Add the fish and herbs to the potatoes, stir everything together, and season with salt and pepper.
