🍽️ Fried Herrings in Wine Marinade

Ingredients
- 1 kg smaller green herring (kitchen-ready prepared)
- salt
- pepper
- 6 tbsp lemon juice
- 3 onions
- 0.25 l wine vinegar
- 120 g sugar
- 1 tbsp peppercorns
- 2 tbsp mustard seeds
- 1 tsp allspice berries
- 3 sprigs dill
- 3 bay leaves
- 2 tbsp flour
- 5 tbsp oil
Instructions
- 1. Rinse the herrings under running water.
- 2. Pat the fish completely dry with kitchen paper.
- 3. Season the herrings inside and out generously with salt and pepper.
- 4. Drizzle lemon juice over the fish.
- 5. Let the herrings marinate for 30 minutes.
- 6. Peel the onions while waiting.
- 7. Slice the onions into thin rings.
- 8. Bring three quarters of a liter of water to a boil in a pot.
- 9. Add the onion rings, vinegar, sugar, spice seeds, bay leaves, and one teaspoon of salt to the boiling water.
- 10. Let the marinade simmer vigorously for 5 minutes.
- 11. Adjust the marinade to taste with more acidity and spice.
- 12. Pat the marinated herrings dry again with kitchen paper.
- 13. Lightly dust the fish with flour.
- 14. Heat the oil in a large pan.
- 15. Fry the herrings on medium heat for about 6 minutes per side until golden brown.
- 16. Place the cooked fish in an oblong dish.
- 17. Pour the warm marinade over the herrings.
- 18. Add fresh dill and bay leaves.
- 19. Cover the dish.
- 20. Let the fried herrings marinate for 2 to 3 days.
