🍽️ Asian-Style Fried Herring

Ingredients
- 4 green herring (kitchen-ready, cleaned and scaled)
- salt
- pepper
- 2 tbsp flour
- 3 tbsp oil
- 2 red onions
- 35 g ginger (1 piece)
- 1 stalk lemongrass
- 3 lime leaves
- 1 red chili pepper
- 200 ml white wine vinegar
- 3 tbsp cane sugar
- 2 tbsp soy sauce
- 2 star anise
- 6 pimento berries
- 5 white peppercorns
Instructions
- 1. Thoroughly wash the herring inside and out.
- 2. Pat the fish dry with a kitchen towel.
- 3. Season the herring with salt and pepper.
- 4. Coat each fish individually in flour.
- 5. Shake off any excess flour from the fish.
- 6. Heat the oil in a large pan.
- 7. Fry the herring for about 4 minutes on the first side.
- 8. Fry the herring for about 4 minutes on the second side.
- 9. Place the cooked fish side by side in a shallow, wide baking dish with high sides.
- 10. Let the fish cool down slightly.
- 11. Peel the onions.
- 12. Slice the onions finely.
- 13. Peel the ginger.
- 14. Slice the ginger finely.
- 15. Remove the outer leaves from the lemongrass.
- 16. Cut off both ends of the lemongrass stalk.
- 17. Chop the lemongrass stalk into small pieces.
- 18. Rinse the lime leaves.
- 19. Dry the lime leaves.
- 20. Cut the lime leaves into pieces if necessary.
- 21. Rinse the chili pepper.
- 22. Halve the chili pepper for less heat.
- 23. Scrape out the seeds from the chili pepper.
- 24. Mix vinegar, 200 milliliters of water, 1 teaspoon of salt, sugar, soy sauce, onions, ginger, lemongrass, lime leaves, and chili in a pot.
- 25. Add star anise, allspice, and peppercorns.
- 26. Bring the mixture to a brief boil.
- 27. Simmer the mixture for 10 minutes over low heat (cook briefly in lightly boiling liquid).
- 28. Remove the pot from the heat.
- 29. Let the liquid (broth) cool for about 5 minutes.
- 30. Pour the still warm broth evenly over the herring.
- 31. Let everything cool completely.
- 32. Cover the dish with plastic wrap.
- 33. Place the herring in the refrigerator to marinate for 2 days.
