  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Rinse the chicken under running water.
  3. 3. Pat the chicken completely dry with a kitchen towel.
  4. 4. Season the meat generously inside and out with salt and pepper.
  5. 5. Rinse the tarragon under running water.
  6. 6. Shake the tarragon dry.
  7. 7. Take half of the tarragon sprigs and fill them into the chicken cavity.
  8. 8. Tie the chicken with kitchen twine to keep its shape.
  9. 9. Grease a baking dish with butter.
  10. 10. Place the chicken in the prepared baking dish.
  11. 11. Brush the chicken with some butter.
  12. 12. Place the chicken in the preheated oven.
  13. 13. Roast the chicken for about 60 minutes.
  14. 14. Brush the chicken with butter repeatedly during the roasting time.
  15. 15. Pour a little water into the dish if necessary to prevent drying out.
  16. 16. Top the chicken with the remaining tarragon in the last 5 minutes.
