🍽️ Crispy Roast Chicken with Fresh Tarragon

Ingredients
- 1 chicken (approx. 1,2 kg)
- salt
- pepper (from the mill)
- 1 handful tarragon
- 30 g butter
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Rinse the chicken under running water.
- 3. Pat the chicken completely dry with a kitchen towel.
- 4. Season the meat generously inside and out with salt and pepper.
- 5. Rinse the tarragon under running water.
- 6. Shake the tarragon dry.
- 7. Take half of the tarragon sprigs and fill them into the chicken cavity.
- 8. Tie the chicken with kitchen twine to keep its shape.
- 9. Grease a baking dish with butter.
- 10. Place the chicken in the prepared baking dish.
- 11. Brush the chicken with some butter.
- 12. Place the chicken in the preheated oven.
- 13. Roast the chicken for about 60 minutes.
- 14. Brush the chicken with butter repeatedly during the roasting time.
- 15. Pour a little water into the dish if necessary to prevent drying out.
- 16. Top the chicken with the remaining tarragon in the last 5 minutes.
