🍽️ Crispy Pork Roast with Lemon, Garlic, and Mushrooms

Ingredients
- 800 g pork roast (from the shoulder without rind)
- 2 untreated lemons
- 2 sprigs rosemary
- 5 sprigs thyme
- 2 garlic cloves
- 3 tbsp olive oil
- 1 tsp wild fennel seeds
- salt
- pepper (from the mill)
- fat (for the roasting pan)
- 400 g mixed mushrooms (e.g. porcini, chestnut, brown cap, portobello)
- 2 tbsp lingonberry jam
Instructions
- 1. Turn on the oven to 250 degrees Celsius with top and bottom heat.
- 2. Rinse the meat under running water.
- 3. Pat the meat completely dry with a kitchen towel.
- 4. Rinse one lemon under hot water.
- 5. Grate the lemon zest finely.
- 6. Squeeze the juice from the lemon.
- 7. Wash the fresh herbs under running water.
- 8. Shake the herbs dry.
- 9. Pluck the leaves from the herb stems.
- 10. Chop the herbs finely.
- 11. Peel the garlic.
- 12. Chop the garlic finely.
- 13. Mix the oil with the lemon juice.
- 14. Add the chopped herbs to the oil-lemon mixture.
- 15. Add the lemon zest to the mixture.
- 16. Add the chopped garlic to the mixture.
- 17. Add the fennel seeds to the mixture.
- 18. Season the mixture with salt.
- 19. Season the mixture with pepper.
- 20. Rub the meat all over with the marinade.
- 21. Grease a roasting pan or casserole dish.
- 22. Place the meat in the prepared pan.
- 23. Roast the meat in the preheated oven for 15 to 20 minutes.
- 24. Turn the meat occasionally.
- 25. Roast the meat until it is golden brown on all sides.
- 26. Wash the mushrooms.
- 27. Cut the mushrooms into pieces if necessary.
- 28. Rinse the second lemon under hot water.
- 29. Slice the second lemon.
- 30. Reduce the oven temperature to 200 degrees Celsius with top and bottom heat.
- 31. Braise the meat for 1 to 1.5 hours until cooked through.
- 32. Baste the meat occasionally with the pan juices.
- 33. Add the mushrooms 25 minutes before the end of the cooking time.
- 34. Add the jam 25 minutes before the end of the cooking time.
- 35. Add the lemon slices 25 minutes before the end of the cooking time.
- 36. Let the ingredients cook along for the remaining time.
- 37. Place the finished roast on a large platter.
- 38. Add the mushrooms and lemon slices to the platter.
- 39. Serve the dish.
