  1. 1. Take a small bowl and add the cornstarch, a small splash of cold milk, and the cinnamon. Stir everything vigorously until you have a smooth paste without lumps.
  2. 2. Add the remaining milk, sugar, and vanilla sugar to a saucepan. Place the pan on the stove and bring the milk to a boil.
  3. 3. Pour the cinnamon-cornstarch paste into the hot milk. Stir well and let the sauce boil briefly once more to thicken.
  4. 4. Remove the saucepan from the heat. Let the sauce cool down and stir it occasionally to prevent a skin from forming on the surface.
  5. 5. Rinse the apples under running water. Carefully cut off the top of the apples so that you get a small lid.
  6. 6. Take a melon baller and remove the core of the apples. Hollow out the apples slightly while doing this.
  7. 7. Wash the lemon and pat it dry with a cloth. Grate the zest finely or use a zester.
  8. 8. Take a bowl and mix the almonds, brown sugar, and lemon zest together.
  9. 9. Fill the almond-sugar mixture into the hollowed-out apples.
  10. 10. Take a heatproof baking dish. Brush the dish with a little butter so that the apples do not stick.
  11. 11. Place the filled apples into the prepared dish.
  12. 12. Place the previously cut-off apple lids back on the fruits.
  13. 13. Pour the orange juice into the baking dish around the apples.
  14. 14. Distribute small pieces of butter on top of the apples.
  15. 15. Preheat the oven to 200 degrees (Gas Level 3-4 or Fan 180 degrees).
  16. 16. Place the dish in the oven and bake the apples for about 20 minutes.
  17. 17. Take the warm baked apples out of the oven.
  18. 18. Serve the apples together with the cooled cinnamon sauce.
  19. 19. Garnish the dish with fresh lemon balm.
