Instructions

  1. 1. Place the dried cherries, cranberries, and sultanas in a small bowl. Pour 2 tablespoons of apple juice over them and let the fruits soak.
  2. 2. Wash the apples thoroughly. Remove the cores using a special apple corer.
  3. 3. Finely chop the almonds. Mix them with the soaked cherries, cranberries, and sultanas in the bowl.
  4. 4. Fill the hollowed-out apples with the fruit mixture using a teaspoon. Place the stuffed apples in a baking dish.
  5. 5. Pour the remaining apple juice over the apples in the dish. Bake them in the preheated oven at 200 °C conventional heat (or 180 °C fan-forced or gas mark 3) for 30 to 35 minutes.
  6. 6. Slice the vanilla pod lengthwise. Scrape out the vanilla seeds with the tip of a knife and mix them with the sugar.
  7. 7. Stir the vanilla sugar smoothly into the yogurt. Spread the vanilla yogurt sauce onto the plates, place one baked apple on each, and serve.
