🍰 Baked Apples with Vanilla Yogurt Sauce – smarter

Ingredients
- 1 tbsp dried cherries (no added sugar)
- 1 tbsp dried cranberries
- 1 tbsp sultanas
- 6 tbsp cloudy apple juice
- 400 g tart apples (2 apples)
- 1 tbsp almond kernels (unpeeled)
- 0.5 vanilla pod
- 1 tbsp raw cane sugar
- 150 g yogurt (3.5% fat)
Instructions
- 1. Place the dried cherries, cranberries, and sultanas in a small bowl. Pour 2 tablespoons of apple juice over them and let the fruits soak.
- 2. Wash the apples thoroughly. Remove the cores using a special apple corer.
- 3. Finely chop the almonds. Mix them with the soaked cherries, cranberries, and sultanas in the bowl.
- 4. Fill the hollowed-out apples with the fruit mixture using a teaspoon. Place the stuffed apples in a baking dish.
- 5. Pour the remaining apple juice over the apples in the dish. Bake them in the preheated oven at 200 °C conventional heat (or 180 °C fan-forced or gas mark 3) for 30 to 35 minutes.
- 6. Slice the vanilla pod lengthwise. Scrape out the vanilla seeds with the tip of a knife and mix them with the sugar.
- 7. Stir the vanilla sugar smoothly into the yogurt. Spread the vanilla yogurt sauce onto the plates, place one baked apple on each, and serve.
