  1. 1. Put milk and cream into a pot.
  2. 2. Slice the vanilla pod lengthwise.
  3. 3. Scrape out the seeds (pulp) from the pod.
  4. 4. Add the pod and seeds to the milk and cream mixture.
  5. 5. Heat the mixture until it boils.
  6. 6. Remove the pot from the heat.
  7. 7. Whisk egg yolks and sugar in a separate bowl until creamy.
  8. 8. Slowly stir the warm milk-cream mixture into the egg yolk mixture in a thin stream.
  9. 9. Pour the entire mixture back into the pot.
  10. 10. Continue to heat the sauce over low heat.
  11. 11. Stir constantly until the sauce thickens.
  12. 12. Avoid letting the sauce boil again.
  13. 13. Pour the vanilla sauce into a dish.
  14. 14. Let the sauce cool down.
  15. 15. Lightly sprinkle the surface of the sauce with sugar.
  16. 16. This prevents a skin from forming.
  17. 17. Chop the nuts coarsely.
  18. 18. Mix the nuts with the jelly.
  19. 19. Wash the apples.
  20. 20. Remove the cores using a corer.
  21. 21. Drizzle lemon juice into the hollowed apples.
  22. 22. Grease a baking dish with butter.
  23. 23. Place the apples in the dish.
  24. 24. Fill the apples with the nut and jelly mixture.
  25. 25. Place small pieces of butter on top of the filled apples.
  26. 26. Preheat the oven to 180 degrees.
  27. 27. Bake the apples for 35 to 40 minutes.
  28. 28. Serve the warm apples with the cold vanilla sauce.
