🍽️ Oven Apples with Creamy Vanilla Cream

Ingredients
- 250 ml Milk
- 250 ml Whipping Cream
- 1 Vanilla Pod
- 5 Egg Yolks
- 100 g Sugar
- 50 g Pecans
- 4 tbsp Redcurrant Jelly
- 8 Tart Apples (e.g. Boskop)
- Lemon Juice
- 2 tbsp Butter
Instructions
- 1. Put milk and cream into a pot.
- 2. Slice the vanilla pod lengthwise.
- 3. Scrape out the seeds (pulp) from the pod.
- 4. Add the pod and seeds to the milk and cream mixture.
- 5. Heat the mixture until it boils.
- 6. Remove the pot from the heat.
- 7. Whisk egg yolks and sugar in a separate bowl until creamy.
- 8. Slowly stir the warm milk-cream mixture into the egg yolk mixture in a thin stream.
- 9. Pour the entire mixture back into the pot.
- 10. Continue to heat the sauce over low heat.
- 11. Stir constantly until the sauce thickens.
- 12. Avoid letting the sauce boil again.
- 13. Pour the vanilla sauce into a dish.
- 14. Let the sauce cool down.
- 15. Lightly sprinkle the surface of the sauce with sugar.
- 16. This prevents a skin from forming.
- 17. Chop the nuts coarsely.
- 18. Mix the nuts with the jelly.
- 19. Wash the apples.
- 20. Remove the cores using a corer.
- 21. Drizzle lemon juice into the hollowed apples.
- 22. Grease a baking dish with butter.
- 23. Place the apples in the dish.
- 24. Fill the apples with the nut and jelly mixture.
- 25. Place small pieces of butter on top of the filled apples.
- 26. Preheat the oven to 180 degrees.
- 27. Bake the apples for 35 to 40 minutes.
- 28. Serve the warm apples with the cold vanilla sauce.
