🍽️ Grilled Sea Bream with Herb Stuffing

Ingredients
- 4 smaller bream or white bream, cleaned and gutted for the kitchen (but also e.g. gold bream)
- 4 lemons
- salt
- pepper (from the mill)
- 2 tsp lemon juice
- 8 sage leaves
- 2 tbsp olive oil
- oil (for the aluminum foil)
- 150 g shallots (or onions)
- 1 clove garlic
- 1 bunch parsley
- 1 tbsp oil
- salt
- pepper
Instructions
- 1. Rinse the fish under running water.
- 2. Pat the fish inside and out completely dry with a kitchen towel.
- 3. Mix salt, pepper, and lemon juice in a small bowl.
- 4. Rub the fish all over with the spice mixture.
- 5. Wash the sage leaves under cold water.
- 6. Stuff the sage leaves into the belly cavity of the fish.
- 7. Wash the lemons under warm water.
- 8. Cut the lemons in half crosswise through the middle.
- 9. Preheat the grill to medium-high heat.
- 10. Cut a large piece of aluminum foil.
- 11. Brush the aluminum foil thinly with olive oil.
- 12. Peel the shallots.
- 13. Peel the garlic.
- 14. Cut the shallots into very fine cubes.
- 15. Cut the garlic into very fine cubes.
- 16. Wash the parsley under cold water.
- 17. Shake the parsley dry.
- 18. Chop the parsley finely.
- 19. Heat some oil in a pan.
- 20. Sauté the shallots and garlic in the oil.
- 21. Cook the onions until they are translucent.
- 22. Make sure the onions do not turn brown.
- 23. Let the onion mixture cool down completely.
- 24. Mix the cooled onion mixture with the chopped parsley.
- 25. Season the mixture with salt and pepper.
- 26. Place the herb filling into a small bowl.
- 27. Place the oiled aluminum foil directly onto the grill grates.
- 28. Brush the fish outside with some oil.
- 29. Place the fish on the aluminum foil.
- 30. Place the lemon halves next to the fish on the grill.
- 31. Grill the fish for four minutes on the first side.
- 32. Turn the fish and grill them for four minutes on the second side.
- 33. Remove the aluminum foil from the grill.
- 34. Grill the fish for about two minutes on the first side without foil.
- 35. Turn the fish and grill them for about two minutes on the second side without foil.
- 36. Take the fish off the grill.
- 37. Serve the fish together with the parsley-onion mixture.
