  1. 1. Rinse the fish under running water.
  2. 2. Pat the fish inside and out completely dry with a kitchen towel.
  3. 3. Mix salt, pepper, and lemon juice in a small bowl.
  4. 4. Rub the fish all over with the spice mixture.
  5. 5. Wash the sage leaves under cold water.
  6. 6. Stuff the sage leaves into the belly cavity of the fish.
  7. 7. Wash the lemons under warm water.
  8. 8. Cut the lemons in half crosswise through the middle.
  9. 9. Preheat the grill to medium-high heat.
  10. 10. Cut a large piece of aluminum foil.
  11. 11. Brush the aluminum foil thinly with olive oil.
  12. 12. Peel the shallots.
  13. 13. Peel the garlic.
  14. 14. Cut the shallots into very fine cubes.
  15. 15. Cut the garlic into very fine cubes.
  16. 16. Wash the parsley under cold water.
  17. 17. Shake the parsley dry.
  18. 18. Chop the parsley finely.
  19. 19. Heat some oil in a pan.
  20. 20. Sauté the shallots and garlic in the oil.
  21. 21. Cook the onions until they are translucent.
  22. 22. Make sure the onions do not turn brown.
  23. 23. Let the onion mixture cool down completely.
  24. 24. Mix the cooled onion mixture with the chopped parsley.
  25. 25. Season the mixture with salt and pepper.
  26. 26. Place the herb filling into a small bowl.
  27. 27. Place the oiled aluminum foil directly onto the grill grates.
  28. 28. Brush the fish outside with some oil.
  29. 29. Place the fish on the aluminum foil.
  30. 30. Place the lemon halves next to the fish on the grill.
  31. 31. Grill the fish for four minutes on the first side.
  32. 32. Turn the fish and grill them for four minutes on the second side.
  33. 33. Remove the aluminum foil from the grill.
  34. 34. Grill the fish for about two minutes on the first side without foil.
  35. 35. Turn the fish and grill them for about two minutes on the second side without foil.
  36. 36. Take the fish off the grill.
  37. 37. Serve the fish together with the parsley-onion mixture.
