Ingredients
- 150 g spelt flour Type 1050
- 1 tsp baking powder
- 100 g raw cane sugar
- 1 pinch salt
- 120 g room-temperature butter
- 3 ripe bananas
- 1 egg
- 150 g rolled oats
- 60 g almond kernels
- 1 tbsp cacao nibs
- 2 tbsp chocolate chips (from dark chocolate; 15 g)
Instructions
- 1. Put the flour, baking powder, sugar, and a pinch of salt into a large bowl.
- 2. Add the butter in pieces and rub it into the dry ingredients until fine.
- 3. Peel the bananas and mash them with a fork.
- 4. Add the mashed bananas and the egg to the dough.
- 5. Whisk everything with a hand mixer until you have a smooth mixture.
- 6. Gently fold in the oat flakes, almonds, cocoa nibs, and half of the chocolate chips.
- 7. Line a baking sheet with baking paper.
- 8. Take a tablespoon of dough and place small mounds on the sheet.
- 9. Make sure there is enough space between the mounds.
- 10. Sprinkle the cookies with the remaining chocolate chips.
- 11. Bake them in the preheated oven at 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3) for 10 to 15 minutes.
- 12. Remove the trays and let the cookies cool on a wire rack.
