  1. 1. Put the flour, baking powder, sugar, and a pinch of salt into a large bowl.
  2. 2. Add the butter in pieces and rub it into the dry ingredients until fine.
  3. 3. Peel the bananas and mash them with a fork.
  4. 4. Add the mashed bananas and the egg to the dough.
  5. 5. Whisk everything with a hand mixer until you have a smooth mixture.
  6. 6. Gently fold in the oat flakes, almonds, cocoa nibs, and half of the chocolate chips.
  7. 7. Line a baking sheet with baking paper.
  8. 8. Take a tablespoon of dough and place small mounds on the sheet.
  9. 9. Make sure there is enough space between the mounds.
  10. 10. Sprinkle the cookies with the remaining chocolate chips.
  11. 11. Bake them in the preheated oven at 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3) for 10 to 15 minutes.
  12. 12. Remove the trays and let the cookies cool on a wire rack.
