🍽️ Crispy Bread Salad with Mackerel

Ingredients
- 3 slices crusty bread (each 5 mm thick)
- 1 small garlic clove
- 50 g celery stalks (1 stalk; from the center of the stalk)
- 300 g medium-sized tomatoes (4 medium-sized tomatoes)
- 1 red onion
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- salt
- pepper
- 1 chicory
- 3 sprigs dill
- 200 g smoked mackerel fillet
Instructions
- 1. Turn on the broiler function of your oven or place a pan on the stove.
- 2. Place the bread slices in the hot pan or under the grill without oil.
- 3. Toast the bread on both sides until it is golden brown and crispy.
- 4. Take a garlic clove and peel it.
- 5. Cut the garlic clove in half lengthwise.
- 6. Rub the toasted bread slices vigorously with the cut side of the garlic.
- 7. Break the garlic bread slices into small, bite-sized cubes.
- 8. Wash the celery under running water.
- 9. Pull off the stringy fibers from the celery.
- 10. Cut the celery into very fine cubes.
- 11. Wash the tomatoes.
- 12. Cut out the hard stem areas of the tomatoes in a wedge shape.
- 13. Slice the tomatoes into thick slices.
- 14. Peel the onion.
- 15. Slice the onion into very thin rings.
- 16. Add the onion rings, tomato slices, and celery cubes to a large bowl.
- 17. Take a small bowl and add the olive oil.
- 18. Add the vinegar to the small bowl.
- 19. Salt and pepper the oil-vinegar mixture to taste.
- 20. Whisk the dressing ingredients in the small bowl until well combined.
- 21. Pour the dressing over the vegetables in the large bowl.
- 22. Remove the hard bottom base from the chicory.
- 23. Wash the chicory.
- 24. Cut the chicory into very fine strips.
- 25. Wash the dill.
- 26. Shake the dill dry to remove excess water.
- 27. Chop the dill roughly.
- 28. Take the mackerel fillets and remove the skin if present.
- 29. Flake the mackerel meat into small pieces.
- 30. Add the chicory, dill, mackerel, and bread cubes to the vegetable mixture.
- 31. Mix all ingredients in the bowl thoroughly.
- 32. Serve the salad immediately.
