  1. 1. Put sugar, honey, and 5 tablespoons of water into a pot.
  2. 2. Let the mixture bubble vigorously for 2 to 3 minutes.
  3. 3. Add the orange peel.
  4. 4. Pour the cream into a large pot.
  5. 5. Bring the cream to a boil.
  6. 6. Pour the caramel sugar into the hot cream.
  7. 7. Continue to cook the mixture for about 10 minutes while stirring constantly.
  8. 8. For a test, drip a few drops of the caramel mixture onto a cold plate or marble slab.
  9. 9. Check if the drops harden immediately.
  10. 10. Stir in the butter.
  11. 11. Line a rectangular mold (approx. 20x30 cm) with aluminum foil.
  12. 12. Lightly grease the mold.
  13. 13. Pour in the mixture.
  14. 14. Let the mixture cool.
  15. 15. Turn the mold upside down onto a large board.
  16. 16. Peel off the foil.
  17. 17. Cut the mass into individual candies using a slightly oiled knife.
  18. 18. Let the caramel candies cool down completely.
