  1. 1. Cover the beans with water and let them soak overnight.
  2. 2. Drain the beans the next day through a sieve and rinse them under cold water.
  3. 3. Peel the onion and the garlic.
  4. 4. Chop the onion into rough pieces.
  5. 5. Mince the garlic finely.
  6. 6. Sauté the onions and garlic in oil.
  7. 7. Add the beans to the pan.
  8. 8. Pour vegetable broth over everything.
  9. 9. Let the soup simmer for about 35 to 40 minutes.
  10. 10. Wash the spinach and let it drain.
  11. 11. Slice the Cabanossi sausage.
  12. 12. Add the tortellini to the soup.
  13. 13. Cook the tortellini for 2 minutes.
  14. 14. Add the sausage slices and spinach to the soup.
  15. 15. Remove the pot from the heat.
  16. 16. Let the soup steep for about 5 minutes.
  17. 17. Season the soup with salt and pepper.
  18. 18. Divide the soup onto plates.
  19. 19. Sprinkle grated cheese over the soup.
  20. 20. Serve the soup with toasted bread.
