🍽️ Herbal Bean Puree

Ingredients
- 500 g green beans
- 300 g floury potatoes
- 1 handful watercress
- 1 handful flat-leaf parsley
- 5 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Wash the beans thoroughly and remove any tough parts. Peel the potatoes and cut them into small cubes. Wash the herbs and carefully pluck the leaves from the stems.
- 2. Steam the beans, potatoes, and herbs for 15 to 20 minutes in the steamer insert of a saucepan.
- 3. Puree the mixture finely, stir in the olive oil, and season to taste with salt and pepper.
