🍰 Crispy Bean Pie

Ingredients
- 200 g flour
- 1 tsp baking powder
- 1 tsp salt
- 75 g quark
- 50 ml milk
- 40 ml vegetable oil (and oil for the pan)
- flour (for working)
- 250 g yellow, broad beans
- 250 g green beans
- salt
- 200 g quark
- 150 ml whipping cream
- 100 g grated cheese (e.g. mountain cheese)
- 3 eggs
- 1 handful freshly chopped herbs (e.g. dill, parsley, chives)
- pepper (from the mill)
- nutmeg
Instructions
- 1. Put the flour and baking powder into a bowl.
- 2. Mix the dry ingredients briefly.
- 3. Make a small well in the center.
- 4. Add the salt, quark, milk, and oil into the well.
- 5. Knead everything together into a smooth dough.
- 6. If the dough is too dry, add a little more flour.
- 7. If the dough is too sticky, add a little more milk.
- 8. Wrap the dough in cling film.
- 9. Place the dough in the refrigerator for about 1 hour.
- 10. Rinse the beans under running water.
- 11. Cut off the hard ends of the beans.
- 12. Bring water to a boil and add some salt.
- 13. Boil the beans for 8 minutes (blanching means briefly cooking food in boiling water).
- 14. Drain the water and rinse the beans with cold water.
- 15. Let the beans drain well in a sieve.
- 16. Stir the quark with the cream.
- 17. Add the grated cheese to the quark mixture.
- 18. Beat the eggs into the mixture.
- 19. Add the chopped herbs.
- 20. Season the filling generously with salt.
- 21. Season the filling with pepper.
- 22. Season the filling with nutmeg.
- 23. Preheat the oven to 180 degrees Celsius with fan setting.
- 24. Brush the quiche dish with some oil.
- 25. Take the dough out of the refrigerator.
- 26. Sprinkle some flour on a clean work surface.
- 27. Knead the dough on the floured surface again.
- 28. Roll out the dough flat.
- 29. Make sure the dough is large enough for the dish.
- 30. Place the dough into the prepared dish.
- 31. Press the dough firmly at the edges.
- 32. Distribute the drained beans evenly on the dough.
- 33. Pour the quark mixture over the beans.
- 34. Place the dish in the preheated oven.
- 35. Bake the pie for about 50 minutes.
- 36. Take the pie out of the oven when it is golden brown.
- 37. Let the pie cool slightly in the oven or on the tray.
- 38. Cut the pie into pieces.
- 39. Serve the pie while still warm.
- 40. Alternatively, you can serve the pie completely cooled.
