🍽️ Crispy Bean Toast Slices

Ingredients
- 1 kg thick beans (or 300 g frozen)
- salt
- 1 carrot
- 100 g shallots
- 2 garlic cloves
- 40 g streaky, smoked bacon
- 2 tbsp olive oil
- white pepper from the mill
- 1 small cup basil
- 8 slices toast bread
- 100 g grated parmesan
- 4 tbsp whipping cream
Instructions
- 1. Remove the broad beans from their pods.
- 2. Boil the beans in salted water for 3 to 4 minutes.
- 3. Drain the beans and let them drip dry.
- 4. Peel the carrot.
- 5. Slice the carrot thinly.
- 6. Peel the shallots.
- 7. Peel the garlic.
- 8. Dice the garlic finely.
- 9. Dice the bacon.
- 10. Fry the bacon cubes in a pan until crispy.
- 11. Transfer the bacon bits to a plate.
- 12. Add olive oil to the fat in the pan.
- 13. Sauté the shallots in the oil.
- 14. Add the beans and the carrots to the pan.
- 15. Cook the vegetables for 5 to 8 minutes.
- 16. Season the mixture with salt and pepper.
- 17. Finely chop the basil leaves.
- 18. Stir the basil into the vegetables.
- 19. Line a baking sheet with aluminum foil.
- 20. Place the toast slices on the sheet.
- 21. Spread the cream on the toast slices.
- 22. Spread the parmesan on the toast slices.
- 23. Broil the toast slices under the preheated grill until golden brown.
- 24. Place the toast slices on plates.
- 25. Top the toast slices with the bean mixture.
- 26. Sprinkle the toast slices with the bacon bits.
