🍽️ Beans with Anchovies

Ingredients
- 600 g green beans
- salt
- 1 bunch spring onions
- 2 tbsp olive oil
- 1 tsp fresh thyme
- 1 untreated lemon
- 100 ml vegetable stock
- 10 anchovy fillets
- pepper
Instructions
- 1. Wash the beans thoroughly.
- 2. Trim the ends of the beans.
- 3. Boil the beans in salted water for about 4 minutes.
- 4. Remove the beans from the pot.
- 5. Rinse the beans with cold water.
- 6. Let the beans drain.
- 7. Slice the spring onions into thin rings.
- 8. Wash the lemon under hot water.
- 9. Dry the lemon.
- 10. Cut the lemon peel into very thin strips.
- 11. Avoid the white inner part of the peel.
- 12. Squeeze the lemon halves.
- 13. Sauté the spring onions briefly in olive oil.
- 14. Add the beans, thyme, and lemon peel.
- 15. Fry everything for 1 minute while turning.
- 16. Pour in the vegetable stock.
- 17. Simmer the beans covered for 3 to 4 minutes.
- 18. Cut the anchovy fillets as desired or leave them whole.
- 19. Gently fold the anchovies into the beans.
- 20. Season the dish with pepper.
- 21. Season the dish with lemon juice.
- 22. Warm a plate.
- 23. Serve the beans on the pre-warmed plate.
