🥗 Fresh Beans and Celery Salad with Thyme Dressing

Ingredients
- 1 small can cannellini beans (white, small beans)
- 2 stalks celery
- 2 red onions
- 1 small Lollo Bianco
- 4 sprigs thyme
- 4 tbsp olive oil
- 4 tbsp lemon vinegar
- salt
- pepper from the mill
- 40 g chopped pistachios
- to taste thyme (for garnish)
Instructions
- 1. Pour the beans into a colander and rinse them under cold water.
- 2. Let the beans drain well.
- 3. Peel the celery and wash it thoroughly.
- 4. Cut the celery into fine pieces.
- 5. Peel the onions.
- 6. Slice the onions into thin rings.
- 7. Tear the Lollo Bianco leaves into bite-sized pieces.
- 8. Wash the salad leaves.
- 9. Dry the salad leaves using a salad spinner.
- 10. Strip the thyme leaves from the stems.
- 11. Gently heat the olive oil in a pan.
- 12. Add the thyme leaves to the warm oil and briefly sauté them.
- 13. Stir vinegar, salt, and pepper into the oil mixture to make the dressing.
- 14. Mix the drained beans, celery, onions, and salad with the dressing.
- 15. Fold the pistachios into the salad.
- 16. Plate the salad.
- 17. Garnish the salad with fresh thyme leaves if desired.
- 18. Serve the salad.
