🍽️ Ham-Wrapped Green Beans with Fresh Herb Dip

Ingredients
- 500 g green beans
- salt
- 100 g cat ham (thinly sliced)
- 2 tbsp olive oil
- coarse pepper
- 2 hard-boiled eggs
- 1 onion
- 250 g yogurt
- 100 g salad mayonnaise
- salt
- pepper
- 500 g mixed, finely chopped herbs (dill, parsley, chives, basil, a little chervil and lemon balm
Instructions
- 1. Wash the green beans thoroughly.
- 2. Trim the tough ends off the beans.
- 3. Bring water to a boil and add some salt.
- 4. Boil the beans in the salted water for 10 minutes.
- 5. Remove the beans from the pot.
- 6. Rinse the beans immediately with cold water to stop the cooking process.
- 7. Let the beans drain well.
- 8. Wrap each individual bean in a piece of ham.
- 9. Cut the bread slices into narrow strips.
- 10. Heat the olive oil in a pan.
- 11. Fry the bread strips briefly in the hot oil.
- 12. Fry the strips until they are golden brown.
- 13. Let the toasted bread strips cool down.
- 14. Place the ham rolls on the cooled bread strips.
- 15. Season the rolls with coarse pepper.
- 16. Finely chop the boiled eggs.
- 17. Peel the onion.
- 18. Cut the onion into small cubes.
- 19. Put the chopped eggs and onion cubes into a bowl.
- 20. Add the yogurt to the bowl.
- 21. Add the salad mayonnaise to the bowl.
- 22. Mix all ingredients in the bowl well.
- 23. Season the mixture with salt.
- 24. Season the mixture with pepper.
- 25. Finely chop the herbs.
- 26. Gently fold the finely chopped herbs into the sauce.
- 27. Plate the sauce.
- 28. Serve the sauce together with the rolls.
