🍽️ Beans-Saffron-Couscous

Ingredients
- 350 g beans
- 350 g wax beans
- salt
- 1 red chili pepper
- 4 tbsp cashew nuts
- 1 garlic clove
- 4 tbsp olive oil
- 1 tsp sambal oelek
- 400 ml vegetable broth
- 1 Packung saffron threads
- 300 g couscous
- 2 tbsp butter
Instructions
- 1. Trim and rinse the beans. Boil them in salted water for 15 minutes. Drain well. Clean the chili pepper, rinse it, and slice it into rings.
- 2. Toast the cashew nuts in a pan without fat. Peel the garlic and slice it. Fry the garlic and chili pepper in 2 tablespoons of oil. Add the beans, season with salt and sambal, and fry for 5 minutes.
- 3. Bring the broth to a boil and dissolve the saffron in it. Add the couscous and the remaining oil, stir, and let it swell for 5 minutes.
- 4. Fluff the couscous with a fork. Stir in the butter and serve the dish with the beans and roasted cashew nuts.
