🍽️ Refreshing Bean and Papaya Salad

Ingredients
- 100 g beans
- 1 papaya
- 1 chili pepper
- 1 bell pepper
- 1 spring onion
- 2 tsp fresh ginger (grated)
- 2 tbsp mint
- 1 tbsp basil
- 50 ml lime juice
- 1 tbsp olive oil
- salt
- pepper
Instructions
- 1. Place the beans in a bowl and cover them with water.
- 2. Let the beans swell in the water overnight.
- 3. Put the soaked beans into a pot with plenty of fresh water.
- 4. Boil the beans until they are soft.
- 5. Drain the cooking water.
- 6. Let the beans cool down.
- 7. Cut the spring onions into small pieces.
- 8. Dice the papaya into small cubes.
- 9. Cut the chili pepper finely.
- 10. Dice the bell pepper into small cubes.
- 11. Add the papaya, chili, and bell pepper to the cooled beans.
- 12. Add the cut spring onions to the beans.
- 13. Finely chop the mint.
- 14. Finely chop the basil.
- 15. Add the chopped herbs to the beans.
- 16. Add the grated or chopped ginger to the beans.
- 17. Add the lime juice to the beans.
- 18. Add the olive oil to the beans.
- 19. Mix all ingredients well.
- 20. Season the salad with salt.
- 21. Season the salad with pepper.
- 22. Place the salad in the refrigerator.
- 23. Let the salad get cold.
