  1. 1. Bring water to a boil and add some salt.
  2. 2. Cook the beans in this salted water for 6 to 8 minutes.
  3. 3. Remove the beans from the pot and immediately plunge them into a bowl of cold water to stop the cooking process.
  4. 4. Let the beans drain well in a colander.
  5. 5. Optionally, peel off the outer skin from the beans.
  6. 6. Clean the chanterelles carefully.
  7. 7. Cut the mushrooms into bite-sized pieces if they are very large, or leave them whole.
  8. 8. Peel the onion and the garlic.
  9. 9. Finely chop the onion and the garlic.
  10. 10. Heat oil in a pan.
  11. 11. Sauté the chopped onion and garlic in the hot oil until they are soft and translucent.
  12. 12. Add the prepared chanterelles to the pan.
  13. 13. Fry the mushrooms until they are golden brown.
  14. 14. Add the drained beans to the pan.
  15. 15. Heat the beans through together with the mushrooms.
  16. 16. Remove the pan from the heat.
  17. 17. Stir in the butter, the chopped parsley, the lemon juice, salt, pepper, and coriander.
  18. 18. Adjust the seasoning of the sauce with salt and pepper.
  19. 19. Serve the dish warm.
