🍽️ Chanterelles with Beans

Ingredients
- 500 g fresh lima bean
- 400 g chanterelles
- 1 onion
- 1 clove garlic
- 2 tbsp vegetable oil
- 1 tbsp butter
- 2 tbsp fresh chopped parsley
- 1 splash lemon juice
- salt
- pepper
- coriander (ground)
Instructions
- 1. Bring water to a boil and add some salt.
- 2. Cook the beans in this salted water for 6 to 8 minutes.
- 3. Remove the beans from the pot and immediately plunge them into a bowl of cold water to stop the cooking process.
- 4. Let the beans drain well in a colander.
- 5. Optionally, peel off the outer skin from the beans.
- 6. Clean the chanterelles carefully.
- 7. Cut the mushrooms into bite-sized pieces if they are very large, or leave them whole.
- 8. Peel the onion and the garlic.
- 9. Finely chop the onion and the garlic.
- 10. Heat oil in a pan.
- 11. Sauté the chopped onion and garlic in the hot oil until they are soft and translucent.
- 12. Add the prepared chanterelles to the pan.
- 13. Fry the mushrooms until they are golden brown.
- 14. Add the drained beans to the pan.
- 15. Heat the beans through together with the mushrooms.
- 16. Remove the pan from the heat.
- 17. Stir in the butter, the chopped parsley, the lemon juice, salt, pepper, and coriander.
- 18. Adjust the seasoning of the sauce with salt and pepper.
- 19. Serve the dish warm.
