🍽️ Crispy Bean & Shrimp Patties

Ingredients
- 500 g black beans
- 2 cm ginger
- 1 clove garlic
- 1 onion
- 2 tbsp vegetable oil
- 50 g flour
- salt
- pepper
- 200 g small, peeled shrimp
- palm oil (for deep frying)
Instructions
- 1. Place the beans in a large bowl.
- 2. Cover them with plenty of cold water.
- 3. Let the beans soak overnight.
- 4. Drain the soaking water the next day.
- 5. Boil the beans in fresh water.
- 6. Let them cook for about one hour.
- 7. Peel the ginger.
- 8. Peel the garlic clove.
- 9. Grate the ginger finely.
- 10. Press the garlic through.
- 11. Peel the onion.
- 12. Dice the onion finely.
- 13. Rinse the shrimp briefly.
- 14. Let the shrimp drain well.
- 15. Heat the oil in a pan.
- 16. Fry the onions, garlic, and ginger in it.
- 17. Cook the ingredients until they are translucent.
- 18. Remove the pan from the heat.
- 19. Drain the cooked beans.
- 20. Let the beans cool down.
- 21. Rub the beans together.
- 22. Remove the skin in the process.
- 23. Put the beans and the onion mixture into the blender.
- 24. Puree the mixture finely.
- 25. Mix in the flour.
- 26. Season the mixture generously with salt.
- 27. Season the mixture generously with pepper.
- 28. Add the shrimp.
- 29. Mix everything well.
- 30. Preheat the oven.
- 31. Set the temperature to 80 degrees Celsius.
- 32. Turn on top and bottom heat.
- 33. Heat the palm fat in a wide pot.
- 34. Check the heat with a cooking spoon.
- 35. The fat is ready when small bubbles rise on the spoon.
- 36. Form small patties from the bean dough.
- 37. Fry the patties in batches.
- 38. Fry them for 2 to 3 minutes on each side.
- 39. Let the finished patties drain on kitchen paper.
- 40. Keep the patties warm in the oven.
