🍽️ Crostini with Beans and Goat Cheese

Ingredients
- 150 g goat cream cheese
- 1 tsp chive rings
- 1 tsp chopped basil
- 1 handful watercress
- 250 g broad beans (shelled)
- 250 g peas (fresh or frozen)
- 1 garlic clove
- 6 tbsp olive oil
- 1 untreated lemon (zest and juice)
- salt
- pepper (from the mill)
- 8 slices white bread
Instructions
- 1. Put the goat cheese into a bowl.
- 2. Finely chop the chives and stir them into the cheese mixture.
- 3. Chop the basil finely and mix it into the cheese as well.
- 4. Rinse the watercress under cold water.
- 5. Shake the watercress dry thoroughly.
- 6. Bring water to a boil and add some salt.
- 7. Cook the beans in the boiling salted water for about 3 minutes.
- 8. Add the peas to the pot and cook them for another 1 to 2 minutes.
- 9. Drain the vegetables.
- 10. Rinse the vegetables immediately with cold water to stop the cooking process.
- 11. Let the vegetables drain well.
- 12. Peel the garlic.
- 13. Heat 2 tablespoons of oil in a pan.
- 14. Sweat the garlic in the oil until it is soft.
- 15. Make sure the garlic does not turn brown.
- 16. Put the drained beans and peas into a blender.
- 17. Add the lemon zest and some lemon juice.
- 18. Puree the mixture until smooth.
- 19. Stir the sautéed garlic into the bean puree.
- 20. Season the puree with salt to taste.
- 21. Add the remaining lemon juice and mix everything well.
- 22. Heat the remaining oil in a grill pan.
- 23. Place the bread slices in the hot pan.
- 24. Toast the bread slices for 2 to 3 minutes on one side until crispy.
- 25. Turn the bread slices and toast them for another 2 to 3 minutes.
- 26. Remove the toasted bread slices from the pan.
- 27. Place some watercress on each toasted bread slice.
- 28. Add about 1 tablespoon of the goat cheese mixture onto the bread slices.
- 29. Spread some bean puree on each slice.
- 30. Grind fresh pepper over the crostini.
- 31. Arrange the crostini on a plate.
