  1. 1. Put the goat cheese into a bowl.
  2. 2. Finely chop the chives and stir them into the cheese mixture.
  3. 3. Chop the basil finely and mix it into the cheese as well.
  4. 4. Rinse the watercress under cold water.
  5. 5. Shake the watercress dry thoroughly.
  6. 6. Bring water to a boil and add some salt.
  7. 7. Cook the beans in the boiling salted water for about 3 minutes.
  8. 8. Add the peas to the pot and cook them for another 1 to 2 minutes.
  9. 9. Drain the vegetables.
  10. 10. Rinse the vegetables immediately with cold water to stop the cooking process.
  11. 11. Let the vegetables drain well.
  12. 12. Peel the garlic.
  13. 13. Heat 2 tablespoons of oil in a pan.
  14. 14. Sweat the garlic in the oil until it is soft.
  15. 15. Make sure the garlic does not turn brown.
  16. 16. Put the drained beans and peas into a blender.
  17. 17. Add the lemon zest and some lemon juice.
  18. 18. Puree the mixture until smooth.
  19. 19. Stir the sautéed garlic into the bean puree.
  20. 20. Season the puree with salt to taste.
  21. 21. Add the remaining lemon juice and mix everything well.
  22. 22. Heat the remaining oil in a grill pan.
  23. 23. Place the bread slices in the hot pan.
  24. 24. Toast the bread slices for 2 to 3 minutes on one side until crispy.
  25. 25. Turn the bread slices and toast them for another 2 to 3 minutes.
  26. 26. Remove the toasted bread slices from the pan.
  27. 27. Place some watercress on each toasted bread slice.
  28. 28. Add about 1 tablespoon of the goat cheese mixture onto the bread slices.
  29. 29. Spread some bean puree on each slice.
  30. 30. Grind fresh pepper over the crostini.
  31. 31. Arrange the crostini on a plate.
