🍽️ Bean Rolls with Chickpea Cream and Cucumber

Ingredients
- 200 g chickpeas (can)
- 1 clove garlic
- salt
- 1 tbsp tahini (jar)
- 1 tsp lemon juice
- ground cumin
- 1 tbsp olive oil
- 1 onion
- 1 clove garlic
- 250 g white beans (can)
- 250 g chickpeas (can)
- 2 tbsp fresh chopped cilantro
- 0.5 tsp ground coriander
- 0.5 tsp ground cumin
- breadcrumbs (as needed)
- 1 egg
- salt
- pepper (from the mill)
- vegetable oil (for frying)
- 8 small whole grain rolls
- 2 tomatoes
- 100 g cucumber
- 3 lettuce leaves
Instructions
- 1. Pour the chickpeas into a sieve and rinse them under cold water.
- 2. Puree the chickpeas finely using a hand blender.
- 3. Peel the garlic clove and chop it finely.
- 4. Mash the garlic with salt into a paste.
- 5. Add the garlic paste to the chickpeas.
- 6. Stir in tahini, lemon juice, cumin, and oil.
- 7. Stir until a creamy mixture forms.
- 8. Season the cream with salt.
- 9. Peel the onion and dice it.
- 10. Peel the garlic for the burgers.
- 11. Drain the chickpeas.
- 12. Rinse the chickpeas again.
- 13. Let the chickpeas drain well.
- 14. Puree the chickpeas finely in a blender.
- 15. Add the garlic and onion to the blender.
- 16. Fold in the coriander leaves.
- 17. Add ground coriander.
- 18. Add cumin.
- 19. Add the egg.
- 20. Check if the dough is too soft.
- 21. If so, add breadcrumbs.
- 22. Mix everything into a moldable dough.
- 23. Season the dough with salt and pepper.
- 24. Form eight small patties from the dough.
- 25. Heat oil in a pan.
- 26. Fry the patties in hot oil until golden brown.
- 27. Fry them for two to three minutes on each side.
- 28. Slice the buns horizontally in the middle.
- 29. Wash the tomatoes.
- 30. Cut out the stem area of the tomatoes.
- 31. Slice the tomatoes.
- 32. Wash the cucumber.
- 33. Slice the cucumber thinly.
- 34. Wash the salad.
- 35. Remove the tough stems from the salad.
- 36. Tear the salad into small pieces.
- 37. Distribute the tomatoes on the bun halves.
- 38. Distribute the cucumber on the bun halves.
- 39. Distribute the salad on the bun halves.
- 40. Distribute the burger patties on the bun halves.
- 41. Add some of the chickpea cream on top.
- 42. Place the lids of the buns back on.
- 43. Serve the rolls.
