  1. 1. Turn on the oven to 180 degrees Celsius with fan.
  2. 2. Take some butter and grease an ovenproof dish or a pan with it.
  3. 3. Rinse the cauliflower florets under running water.
  4. 4. Bring water to a boil in a pot and add some salt.
  5. 5. Boil the cauliflower florets in the salted water for about 2 minutes (this is called blanching, meaning cooking briefly in boiling water).
  6. 6. Rinse the cauliflower florets immediately with cold water to stop the cooking process.
  7. 7. Let the water drain off and place the florets into the prepared dish.
  8. 8. Whisk the cream, milk, cheese, and eggs together in a bowl.
  9. 9. Season the mixture with salt, pepper, and nutmeg.
  10. 10. Pour the liquid mixture evenly over the cauliflower in the dish.
  11. 11. Cut the white bread into small cubes.
  12. 12. Sprinkle the bread cubes evenly over the surface of the gratin.
  13. 13. Place the dish in the oven and bake the gratin for 25 to 30 minutes.
  14. 14. Take the gratin out when the surface is golden brown and crispy.
