🍽️ Crispy Cauliflower Gratin

Ingredients
- butter (for the dish)
- 800 g cauliflower florets
- salt
- 200 ml heavy cream (at least 30% fat content)
- 100 ml milk
- 100 g freshly grated Emmental cheese
- 2 eggs
- pepper (from the mill)
- nutmeg
- 2 slices white bread (crusts removed)
Instructions
- 1. Turn on the oven to 180 degrees Celsius with fan.
- 2. Take some butter and grease an ovenproof dish or a pan with it.
- 3. Rinse the cauliflower florets under running water.
- 4. Bring water to a boil in a pot and add some salt.
- 5. Boil the cauliflower florets in the salted water for about 2 minutes (this is called blanching, meaning cooking briefly in boiling water).
- 6. Rinse the cauliflower florets immediately with cold water to stop the cooking process.
- 7. Let the water drain off and place the florets into the prepared dish.
- 8. Whisk the cream, milk, cheese, and eggs together in a bowl.
- 9. Season the mixture with salt, pepper, and nutmeg.
- 10. Pour the liquid mixture evenly over the cauliflower in the dish.
- 11. Cut the white bread into small cubes.
- 12. Sprinkle the bread cubes evenly over the surface of the gratin.
- 13. Place the dish in the oven and bake the gratin for 25 to 30 minutes.
- 14. Take the gratin out when the surface is golden brown and crispy.
