🍽️ Potato-free Cauliflower Cream Soup

Ingredients
- 2 carrots
- 1 small kohlrabi
- 400 ml vegetable broth (instant)
- 4 tbsp whipping cream
- 200 g small cauliflower florets
- 1 tbsp chive rings
- salt
- pepper (from the mill)
Instructions
- 1. Peel the carrots and the kohlrabi. Slice the carrots into rounds and dice the kohlrabi into small cubes.
- 2. Bring the vegetable broth to a boil and cook the carrots and kohlrabi in it for about 15 minutes. Remove a few pieces of vegetables, puree the rest until smooth, and season the soup with salt and pepper.
- 3. Pour the pureed mixture back into the pot, add the cauliflower, and let the soup simmer gently for another 5 minutes. Stir in the cream and serve the soup in soup bowls. Garnish with chives if desired.
