🍽️ Cauliflower Casserole with Bread Dumplings and Sausage

Ingredients
- 500 g bread for dumplings
- 200 ml milk
- 1 onion
- 0.5 handful parsley
- 1 tbsp butter
- salt
- pepper (from the mill)
- nutmeg
- 2 eggs
- breadcrumbs (if needed)
- 1 head cauliflower
- salt
- 200 g Cabanossi
- 0.5 handful parsley
- 200 ml whipping cream
- 2 tsp paprika powder (sweet)
- pepper (from the mill)
- 150 g grated mountain cheese
Instructions
- 1. Place the bread for dumplings into a large bowl.
- 2. Bring the milk to a boil in a saucepan.
- 3. Pour the boiling milk over the bread.
- 4. Let the mixture soak for about 15 minutes.
- 5. Peel the onion.
- 6. Dice the onion finely.
- 7. Wash the parsley.
- 8. Shake the parsley dry.
- 9. Pluck off the parsley leaves.
- 10. Chop the parsley leaves finely.
- 11. Heat butter in a small saucepan.
- 12. Sweat the onion cubes in the hot butter until translucent.
- 13. Remove the saucepan from the heat.
- 14. Stir the chopped parsley into the onions.
- 15. Add the onion and parsley mixture to the soaked bread.
- 16. Season the mixture with salt.
- 17. Season the mixture with pepper.
- 18. Season the mixture with nutmeg.
- 19. Add the eggs to the mixture.
- 20. Knead the mixture thoroughly with your hands.
- 21. If the dough is too wet, add some breadcrumbs.
- 22. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 23. Wash the cauliflower.
- 24. Remove the leafy greens from the cauliflower.
- 25. Divide the cauliflower into small florets.
- 26. Bring salted water to a boil in a pot.
- 27. Blanch the cauliflower florets in the boiling water.
- 28. Cook the florets for about 5 minutes.
- 29. Drain the cooking water.
- 30. Immediately shock the cauliflower with ice-cold water.
- 31. Let the cauliflower drain well.
- 32. Cut the sausages into bite-sized pieces.
- 33. Wash the parsley.
- 34. Shake the parsley dry.
- 35. Chop the parsley leaves finely.
- 36. Pour the cream into a bowl.
- 37. Add two tablespoons of parsley to the cream.
- 38. Add paprika powder to the cream.
- 39. Season the cream with salt.
- 40. Season the cream with pepper.
- 41. Whisk the cream with the spices.
- 42. Pour the cream mixture into a large baking dish.
- 43. Distribute the dumplings evenly in the dish.
- 44. Distribute the cauliflower evenly in the dish.
- 45. Distribute the sausage pieces evenly in the dish.
- 46. Sprinkle everything with the grated cheese.
- 47. Bake the casserole in the preheated oven.
- 48. Bake the casserole for about 20 minutes.
- 49. Sprinkle the remaining parsley over the casserole.
- 50. Serve the dish hot.
