  1. 1. Toast the nuts in a hot pan without oil over medium heat for 3 minutes. Remove them, let them cool, and chop them coarsely.
  2. 2. Peel the shallots and dice them finely. Wash the herbs, shake them dry, and chop the leaves. Clean the cauliflower, wash it, and divide it into very small florets.
  3. 3. Heat the oil in a pan. Add the cauliflower and fry it for approx. 5 minutes over medium heat, turning occasionally, until the florets are lightly browned. Add the shallots and cook for 2–3 minutes.
  4. 4. Whisk the eggs in a bowl with cooking cream, salt, pepper, 1 pinch of freshly grated nutmeg, and the herbs. Sprinkle the nuts over the cauliflower and pour the egg mixture over everything.
  5. 5. Crumble the feta over the tortilla and let it set covered for 8–10 minutes. Season the cauliflower tortilla to taste with salt and pepper again, cut it into pieces, and serve.
