🍕 Crispy Cauliflower Pizza with Goat Cheese and Spinach

Ingredients
- 400 g small cauliflower (0.5 small cauliflower)
- 70 g Emmental (1 piece; 20 % fat in dry matter)
- 70 g Parmesan (1 piece; 30 % fat in dry matter)
- 3 eggs
- 10 g ground psyllium husks (3 tsp)
- 1 tsp dried oregano
- salt
- pepper
- 50 g soft goat cheese (20 % fat in dry matter)
- 50 g young spinach
- 1 red onion
- 15 g walnut kernels (1 tbsp)
- 120 g strained tomatoes (8 tbsp; Tetrapak)
Instructions
- 1. Wash the cauliflower thoroughly.
- 2. Remove the tough stems.
- 3. Grate the cauliflower flesh into small flakes using a fine grater.
- 4. Grate the cheese finely as well.
- 5. Whisk the eggs in a bowl.
- 6. Mix the eggs with the grated cheese.
- 7. Add the psyllium husks.
- 8. Psyllium husks are a fiber source that acts as a binder.
- 9. Sprinkle oregano, salt, and pepper on top.
- 10. Let the mixture rest for about 10 minutes.
- 11. The psyllium husks swell during this time.
- 12. Fold the cauliflower flakes into the mixture.
- 13. Line a baking sheet with baking paper.
- 14. Spread the cauliflower mixture onto the sheet.
- 15. Shape 2 or 4 thin, round crusts.
- 16. Preheat the oven to 200 °C.
- 17. Use 180 °C with fan setting.
- 18. For gas ovens, this corresponds to setting 3.
- 19. Pre-bake the crusts for about 10 to 15 minutes.
- 20. They are ready when they are firm.
- 21. Slice the goat cheese into thin rounds.
- 22. Wash the spinach.
- 23. Shake the spinach dry.
- 24. Remove thick stems from the spinach.
- 25. Peel the onion.
- 26. Slice the onion into thin rings.
- 27. Roughly chop the nuts.
- 28. Remove the pre-baked pizza crusts from the oven.
- 29. Spread the pureed tomatoes evenly over them.
- 30. Top the crusts with the onion rings.
- 31. Place the goat cheese slices on top.
- 32. Season with a little salt and pepper.
- 33. Bake the pizza for another 15 minutes.
- 34. The cheese is done when it is golden brown.
- 35. Remove the pizza from the oven.
- 36. Cut 2 large crusts each in half.
- 37. Distribute the spinach leaves on top.
- 38. Sprinkle the chopped nuts over it.
