  1. 1. Put the chickpea flour into a bowl. Season it with cumin, coriander, turmeric, chili, and salt. Stir in about 250 milliliters of cold water while stirring constantly until you have a smooth batter.
  2. 2. The batter should be relatively thick so that the vegetables can be well-coated.
  3. 3. Heat oil for frying in a pot. Hold the handle of a cooking spoon in the hot fat; if bubbles rise, the oil is hot enough.
  4. 4. Wash the cauliflower, remove the greens, and divide it into small florets. Dip the florets in batches into the batter and fry them in the hot oil until golden brown. Turn them occasionally. Lift the crispy fried vegetables out of the oil with a slotted spoon and let them drain on kitchen paper.
  5. 5. Serve the fritters hot or lukewarm, garnished with lime wedges and mint leaves. A cream cheese or yogurt dip goes perfectly with them.
