  2. 2. Divide the cauliflower into small florets.
  3. 3. Fill a pot with plenty of water and add a pinch of salt and the juice of one lemon.
  4. 4. Bring the water to a boil.
  5. 5. Add the cauliflower florets to the boiling water.
  6. 6. Place a lid on the pot.
  7. 7. Cook the cauliflower for 10 to 15 minutes.
  8. 8. Check if the cauliflower is tender but still firm.
  9. 9. Drain the water from the cauliflower.
  10. 10. Set the oven to 80 degrees Celsius.
  11. 11. Keep the cauliflower warm in the oven.
  12. 12. Cut off the hard crusts from the bread slices.
  13. 13. Soak the bread slices briefly in lukewarm water.
  14. 14. Roughly chop the walnuts.
  15. 15. Heat a pan without oil.
  16. 16. Lightly toast the walnuts in the pan.
  17. 17. Squeeze the soaked bread well.
  18. 18. Mash the bread into a fine paste.
  19. 19. Add the two oils and the remaining lemon juice to the bread mixture.
  20. 20. Mix everything well together.
  21. 21. Stir in the toasted walnuts.
  22. 22. Peel the garlic.
  23. 23. Press the garlic into the sauce.
  24. 24. Season the sauce with salt and pepper.
  25. 25. Add a little lukewarm water if necessary.
  26. 26. Stir until the sauce is creamy.
  27. 27. Take four plates.
  28. 28. Place the cauliflower on the plates.
  29. 29. Add the walnut sauce.
  30. 30. Sprinkle the dish with parsley.
  31. 31. Add a little extra pepper on top.
  32. 32. Serve the dish immediately.
