🍽️ Cauliflower with Creamy Walnut Sauce (Turkey)

Ingredients
- 1 large cauliflower
- 1 lemon (juiced)
- 100 g walnuts
- 3 slices sandwich bread
- 2 tbsp vegetable oil
- 2 tbsp walnut oil
- 1 clove garlic
- salt
- pepper (white)
Instructions
- 1. Wash the cauliflower thoroughly.
- 2. Divide the cauliflower into small florets.
- 3. Fill a pot with plenty of water and add a pinch of salt and the juice of one lemon.
- 4. Bring the water to a boil.
- 5. Add the cauliflower florets to the boiling water.
- 6. Place a lid on the pot.
- 7. Cook the cauliflower for 10 to 15 minutes.
- 8. Check if the cauliflower is tender but still firm.
- 9. Drain the water from the cauliflower.
- 10. Set the oven to 80 degrees Celsius.
- 11. Keep the cauliflower warm in the oven.
- 12. Cut off the hard crusts from the bread slices.
- 13. Soak the bread slices briefly in lukewarm water.
- 14. Roughly chop the walnuts.
- 15. Heat a pan without oil.
- 16. Lightly toast the walnuts in the pan.
- 17. Squeeze the soaked bread well.
- 18. Mash the bread into a fine paste.
- 19. Add the two oils and the remaining lemon juice to the bread mixture.
- 20. Mix everything well together.
- 21. Stir in the toasted walnuts.
- 22. Peel the garlic.
- 23. Press the garlic into the sauce.
- 24. Season the sauce with salt and pepper.
- 25. Add a little lukewarm water if necessary.
- 26. Stir until the sauce is creamy.
- 27. Take four plates.
- 28. Place the cauliflower on the plates.
- 29. Add the walnut sauce.
- 30. Sprinkle the dish with parsley.
- 31. Add a little extra pepper on top.
- 32. Serve the dish immediately.
