🍽️ Cauliflower Gratin Without Pre-cooking

Ingredients
- 1 kg cauliflower (approx. 2 small heads)
- 1 onion
- 1 tbsp sunflower oil
- 150 ml vegetable broth
- 250 ml whipping cream
- 2 eggs
- salt
- pepper (from the mill)
- freshly ground nutmeg
- 150 g grated mountain cheese
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Wash the cauliflower and cut it into small florets.
- 3. Peel the onion and dice it finely.
- 4. Sauté the onion dice in the oil in an ovenproof pan until translucent.
- 5. Add the cauliflower.
- 6. Pour in the vegetable broth.
- 7. Bake in the preheated oven for 15 minutes.
- 8. Meanwhile, whisk the cream with the eggs.
- 9. Season the mixture with salt, pepper, and nutmeg.
- 10. Pour the cream-egg mixture over the cauliflower.
- 11. Bake for another 10 minutes.
- 12. Sprinkle the grated cheese on top.
- 13. Bake for a further 10 minutes until golden.
