  1. 1. Clean the cauliflower, wash it, and break it into small florets. Then, process these in a blender or food processor until they are as fine as rice. Clean the spring onions, wash them, slice two of them into rings, and finely chop the rest.
  2. 2. Heat one tablespoon of olive oil in a pan and sauté the cauliflower along with the spring onion rings over medium heat for 3 minutes. Season the mixture with salt, pepper, and chili flakes.
  3. 3. Clean the salad greens, wash them, spin them dry, and cut them into strips. Clean the tomatoes and the cucumber and wash them as well. Cut the tomatoes in half and dice the cucumber.
  4. 4. Peel the garlic for the dressing, press it into a bowl, and stir in the remaining oil, vinegar, honey, mustard, and spring onion rings.
  5. 5. Wash the blueberries and pat them dry. Arrange the salad greens, tomatoes, cucumber, cauliflower rice, and blueberries in bowls. Crumble the feta cheese over the top, sprinkle with nuts, and drizzle the bowl with the dressing.
