🍽️ Crispy Cauliflower Bites

Ingredients
- 300 g cauliflower florets
- 200 g potatoes
- 1 handful parsley
- 2 eggs (size M)
- 2 tbsp cornstarch (15 g each)
- 0.5 tsp salt
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 1 tbsp nutritional yeast flakes
Instructions
- 1. Rinse the cauliflower florets under running water.
- 2. Shake the vegetables vigorously to remove excess water.
- 3. Cut the cauliflower florets into small, bite-sized pieces.
- 4. Peel the potatoes completely.
- 5. Rinse the peeled potatoes.
- 6. Dice the potatoes into small cubes.
- 7. Fill a pot with water and bring it to a boil.
- 8. Place a steamer insert over the hot water.
- 9. Put the cauliflower and potatoes into the steamer insert.
- 10. Steam the vegetables until they are tender.
- 11. Remove the steamer insert from the pot.
- 12. Let the steamed vegetables cool down.
- 13. Wash the fresh parsley.
- 14. Shake the parsley dry.
- 15. Finely chop the parsley leaves.
- 16. Roughly chop the cooled cauliflower and potatoes.
- 17. Ensure the mixture has a rice-like texture.
- 18. Squeeze the vegetable mixture firmly.
- 19. Remove the released liquid.
- 20. Mix the dry mass with the chopped parsley in a bowl.
- 21. Shape small balls from each tablespoon of the mixture.
- 22. Line a baking sheet with baking paper.
- 23. Place the bites on the prepared tray.
- 24. Preheat the oven to 220 °C (convection 200 °C, gas mark 3–4).
- 25. Bake the bites for 10 to 15 minutes.
- 26. Turn the bites once halfway through the baking time.
- 27. Bake them for another 10 to 15 minutes until golden brown.
