  1. 1. Rinse the cauliflower florets under running water.
  2. 2. Shake the vegetables vigorously to remove excess water.
  3. 3. Cut the cauliflower florets into small, bite-sized pieces.
  4. 4. Peel the potatoes completely.
  5. 5. Rinse the peeled potatoes.
  6. 6. Dice the potatoes into small cubes.
  7. 7. Fill a pot with water and bring it to a boil.
  8. 8. Place a steamer insert over the hot water.
  9. 9. Put the cauliflower and potatoes into the steamer insert.
  10. 10. Steam the vegetables until they are tender.
  11. 11. Remove the steamer insert from the pot.
  12. 12. Let the steamed vegetables cool down.
  13. 13. Wash the fresh parsley.
  14. 14. Shake the parsley dry.
  15. 15. Finely chop the parsley leaves.
  16. 16. Roughly chop the cooled cauliflower and potatoes.
  17. 17. Ensure the mixture has a rice-like texture.
  18. 18. Squeeze the vegetable mixture firmly.
  19. 19. Remove the released liquid.
  20. 20. Mix the dry mass with the chopped parsley in a bowl.
  21. 21. Shape small balls from each tablespoon of the mixture.
  22. 22. Line a baking sheet with baking paper.
  23. 23. Place the bites on the prepared tray.
  24. 24. Preheat the oven to 220 °C (convection 200 °C, gas mark 3–4).
  25. 25. Bake the bites for 10 to 15 minutes.
  26. 26. Turn the bites once halfway through the baking time.
  27. 27. Bake them for another 10 to 15 minutes until golden brown.
