🍽️ Creamy Blue Cheese Dip

Ingredients
- 1 clove garlic
- 2 spring onions
- 100 g blue cheese (Gorgonzola or similar)
- heavy cream
- lemon juice
- salt
- pepper from the mill
Instructions
- 1. Peel the garlic clove.
- 2. Chop the garlic into very small cubes.
- 3. Wash the spring onions under running water.
- 4. Finely dice the white lower part of the onions.
- 5. Cut the green tops of the onions diagonally into thin rings.
- 6. Break the blue cheese into several small pieces.
- 7. Place the cheese pieces and the cream (or milk) into a tall container.
- 8. Puree the mixture with a hand blender until it is completely smooth.
- 9. Alternatively, press the cheese through a fine sieve into a bowl.
- 10. Stir the cream (or milk) into the pressed cheese until no lumps remain.
- 11. Add a little more cream or milk if you prefer a runnier dip.
- 12. Fold in the chopped garlic and the white onion cubes into the cheese cream.
- 13. Add some lemon juice to the mixture.
- 14. Season the dip to taste with salt and pepper.
- 15. Transfer the finished dip into a serving bowl.
- 16. Sprinkle the surface with the green onion rings.
