  1. 1. Peel the garlic clove.
  2. 2. Chop the garlic into very small cubes.
  3. 3. Wash the spring onions under running water.
  4. 4. Finely dice the white lower part of the onions.
  5. 5. Cut the green tops of the onions diagonally into thin rings.
  6. 6. Break the blue cheese into several small pieces.
  7. 7. Place the cheese pieces and the cream (or milk) into a tall container.
  8. 8. Puree the mixture with a hand blender until it is completely smooth.
  9. 9. Alternatively, press the cheese through a fine sieve into a bowl.
  10. 10. Stir the cream (or milk) into the pressed cheese until no lumps remain.
  11. 11. Add a little more cream or milk if you prefer a runnier dip.
  12. 12. Fold in the chopped garlic and the white onion cubes into the cheese cream.
  13. 13. Add some lemon juice to the mixture.
  14. 14. Season the dip to taste with salt and pepper.
  15. 15. Transfer the finished dip into a serving bowl.
  16. 16. Sprinkle the surface with the green onion rings.
