  1. 1. Put the different types of flour into a large bowl and sprinkle the dried yeast over them.
  2. 2. Add the milk, the egg, and a pinch of salt, and quickly knead the mixture into a smooth dough. Cover the bowl and let the dough rise in a warm place for about 1 hour.
  3. 3. Turn on the oven to 100 degrees Celsius (using top and bottom heat) to keep it warm.
  4. 4. Heat some ghee in a frying pan. Use a tablespoon to put some batter into the pan and bake small pancakes golden brown on both sides. Keep the finished blinis warm in the oven.
  5. 5. Stir the sour cream (schmand) with the cream cheese until smooth, and season the mixture with salt and pepper to taste.
  6. 6. Spread the cheese-cream mixture over the finished blinis and place a piece of smoked salmon on each one.
  7. 7. Garnish the blinis with fresh herbs, olives, and red peppercorns.
