🍽️ Flat yeast pancakes with sour cream and smoked salmon

Ingredients
- 200 g wheat flour
- 50 g buckwheat flour
- 20 g dry yeast
- 0.13 l milk
- 1 egg
- salt
- ghee (for frying)
- 150 g smoked salmon
- 100 g sour cream
- 50 g cream cheese
- pepper (from the mill)
- salt
- dill
- basil
- olives
- red peppercorns
Instructions
- 1. Put the different types of flour into a large bowl and sprinkle the dried yeast over them.
- 2. Add the milk, the egg, and a pinch of salt, and quickly knead the mixture into a smooth dough. Cover the bowl and let the dough rise in a warm place for about 1 hour.
- 3. Turn on the oven to 100 degrees Celsius (using top and bottom heat) to keep it warm.
- 4. Heat some ghee in a frying pan. Use a tablespoon to put some batter into the pan and bake small pancakes golden brown on both sides. Keep the finished blinis warm in the oven.
- 5. Stir the sour cream (schmand) with the cream cheese until smooth, and season the mixture with salt and pepper to taste.
- 6. Spread the cheese-cream mixture over the finished blinis and place a piece of smoked salmon on each one.
- 7. Garnish the blinis with fresh herbs, olives, and red peppercorns.
