🍳 Small pancakes with sour cream and smoked salmon

Ingredients
- 200 g Wheat Flour
- 50 g Buckwheat Flour
- 20 g Dry Yeast
- 0.13 l Milk
- 1 Egg
- Salt
- Ghee (for frying)
- 150 g Smoked Salmon (in thin slices)
- 100 g Crème fraîche
- 50 g Cream Cheese
- 1 tbsp Lemon Juice
- 1 pinch Sugar
- Pepper (from the mill)
- Salt
- 1 tbsp Chive Rings
Instructions
- 1. Put the different types of flour into a bowl and mix in the dried yeast. Add the milk, the egg, and the salt, and quickly knead everything into a smooth dough. Cover the bowl and let the dough rise in a warm place for about 1 hour.
- 2. Preheat the oven to 100 degrees Celsius (using top and bottom heat) to keep the finished blinis warm.
- 3. Heat some ghee in a frying pan. Take a tablespoon of dough and place it in the pan to form small pancakes. Fry the blinis on both sides until golden brown. Keep them warm in the preheated oven.
- 4. Stir the crème fraîche until smooth with the cream cheese. Season the mixture with lemon juice, a pinch of sugar, salt, and pepper to taste.
- 5. Spread the cheese cream onto the finished blinis. Place a piece of smoked salmon on top of the cream.
- 6. Garnish the blinis with fine chive rolls and serve immediately.
