  1. 1. Put the different types of flour into a bowl and mix in the dried yeast. Add the milk, the egg, and the salt, and quickly knead everything into a smooth dough. Cover the bowl and let the dough rise in a warm place for about 1 hour.
  2. 2. Preheat the oven to 100 degrees Celsius (using top and bottom heat) to keep the finished blinis warm.
  3. 3. Heat some ghee in a frying pan. Take a tablespoon of dough and place it in the pan to form small pancakes. Fry the blinis on both sides until golden brown. Keep them warm in the preheated oven.
  4. 4. Stir the crème fraîche until smooth with the cream cheese. Season the mixture with lemon juice, a pinch of sugar, salt, and pepper to taste.
  5. 5. Spread the cheese cream onto the finished blinis. Place a piece of smoked salmon on top of the cream.
  6. 6. Garnish the blinis with fine chive rolls and serve immediately.
