🍽️ Crispy Buckwheat Pancakes with Smoked Trout and Crispy Fish Bladders

Ingredients
- 150 g Buckwheat flour
- 150 g Flour
- 1 Pinch Salt
- 20 g Yeast (1/2 Cube)
- 300 ml lukewarm Milk
- 2 tbsp Liquid Butter
- 2 Egg whites
- Ghee (for frying)
- 300 g Sour cream
- Salt
- Pepper
- 4 Trout fillets (smoked)
- 12 Slices Tripe
- 4 tbsp Chive rings
Instructions
- 1. Separate the eggs carefully. Lift the yolk away from the egg white.
- 2. Mix the regular flour with the buckwheat flour in a bowl.
- 3. Dissolve the yeast in the lukewarm milk.
- 4. Stir the yeast milk into the flour mixture along with the melted butter and a pinch of salt.
- 5. Cover the bowl.
- 6. Let the dough rise in a warm place until it has doubled in size.
- 7. Whip the egg white until stiff.
- 8. Gently fold the whipped egg white into the finished batter just before cooking.
- 9. Heat some ghee in a frying pan.
- 10. Pour one ladle of batter into the pan.
- 11. Spread the batter thinly in the pan.
- 12. Fry the pancakes until golden brown on both sides.
- 13. Keep the finished pancakes warm.
- 14. Layer the pancakes alternately with the crispy fish bladders, the trout pieces, and the seasoned sour cream.
- 15. Use all ingredients until they are used up.
- 16. Sprinkle the filled pancakes with fresh chopped chives.
- 17. Place a second pancake diagonally on top to connect them.
- 18. Serve the dish immediately.
