🍰 Fluffy Blinis with Raspberry Sauce

Ingredients
- 150 g buckwheat flour
- 150 g flour
- 1 pinch salt
- 20 g yeast (1/2 cube)
- 300 ml milk
- 2 tbsp butter
- 2 eggs
- butter (for frying)
- 400 g raspberries
- 2 tbsp honey
- 40 ml raspberry schnapps
Instructions
- 1. Separate the eggs. Carefully lift the yolks away from the whites.
- 2. Mix the regular flour with the buckwheat flour in a bowl.
- 3. Dissolve the yeast in the milk.
- 4. Add the liquid butter and salt to the milk-yeast mixture.
- 5. Stir the liquid into the flour mixture.
- 6. Cover the bowl.
- 7. Let the dough rise in a warm place until it has expanded.
- 8. Whip the egg whites until they are stiff and firm.
- 9. Gently fold the whipped egg whites into the batter just before baking.
- 10. Heat a little butter in a pan.
- 11. Place a heaping tablespoon of batter into the pan.
- 12. Press the batter down slightly in the pan.
- 13. Fry the blinis on both sides until golden brown.
- 14. Repeat the process with the remaining batter.
- 15. Bring the raspberries together with the raspberry spirit and the honey to a boil.
- 16. Serve the sauce together with the finished blinis.
