🍽️ Crispy Blini with Cucumber Cream

Ingredients
- 0.5 cube fresh yeast (approx. 10 g)
- 500 ml milk
- 1 tsp honey
- 4 eggs
- 1 pinch salt
- 200 g buckwheat flour
- 1 handful chives
- 250 g crème fraîche
- salt
- pepper (from the mill)
- 0.5 cucumber
- ghee (for frying)
Instructions
- 1. Crumble the fresh yeast into the lukewarm milk.
- 2. Stir in the honey, eggs, and a pinch of salt.
- 3. Add the flour gradually and mix until smooth.
- 4. Let the dough rise in a warm place for about 15 minutes.
- 5. Wash the chives and pat them dry with kitchen paper.
- 6. Cut the chives into fine rings.
- 7. Mix the chive rings with the crème fraîche.
- 8. Season the cream with salt and pepper to taste.
- 9. Wash the cucumber and slice it into thin rounds.
- 10. Heat some ghee in a non-stick pan.
- 11. Fry small, flat blini from the dough until golden brown.
- 12. Repeat the process until all the dough is used up.
- 13. Arrange the finished blini on the plates.
- 14. Top each blini with a slice of cucumber.
- 15. Add a dollop of the herb cream on top.
