Ingredients
- 150 g Buckwheat flour
- 50 g Flour
- 1 pinch Salt
- 10 g Yeast
- 250 ml lukewarm Milk
- 2 tbsp liquid Butter
- 3 Eggs
- Ghee (for frying)
- 200 g Sour cream
- Keta caviar
- Cured salmon (in thin slices)
Instructions
- 1. Separate the eggs. Carefully lift the yolk away from the egg white.
- 2. Mix the regular flour with the buckwheat flour in a bowl.
- 3. Dissolve the yeast in the milk.
- 4. Add the liquid butter, the egg yolks, and a pinch of salt to the milk-yeast mixture.
- 5. Stir this liquid into the flour mixture.
- 6. Cover the bowl.
- 7. Let the dough rise in a warm place for about 45 minutes.
- 8. Beat the egg whites until they are firm and frothy.
- 9. Gently fold the beaten egg whites into the batter just before baking.
- 10. Heat some butter in a pan.
- 11. Place a full spoonful of batter into the pan.
- 12. Press the mounds slightly flat.
- 13. Fry the blini on both sides until golden brown.
- 14. Keep the finished blini warm.
- 15. Serve the blini with salmon caviar, cured salmon, and sour cream.
