🍽️ Red cabbage with roasted nuts

Ingredients
- 600 g red cabbage
- 5 tbsp red wine vinegar
- 1 tbsp apple juice
- 1 tbsp olive oil
- 2 tbsp liquid honey
- 1 pinch allspice powder
- 1 pinch clove powder
- 1 pinch cinnamon powder
- salt
- pepper (from the mill)
- 100 g peeled walnut halves
Instructions
- 1. Remove the hard core from the red cabbage, cut the vegetable into quarters, and then chop it into thin strips. Place the strips in a bowl, pour boiling water over them, and let them sit for five minutes. Then drain the water and let the cabbage drain well.
- 2. Whisk the vinegar with the juice, oil, and honey to form a smooth sauce. Add the spices and finally season the mixture to taste with salt and pepper.
- 3. Roast the nuts in a hot pan without additional fat until they smell fragrant. Remove them from the pan, let them cool, and then chop them coarsely. Mix the nuts with the vinaigrette and the drained red cabbage, let the mixture infuse briefly, and serve it in small bowls.
