🍽️ Leaf salad with ham and truffle

Ingredients
- 200 g mixed salad leaves (arugula, frisée, Batavia...)
- 2 tbsp Aceto balsamico
- salt
- pepper (from the mill)
- 4 tbsp sunflower oil
- 100 g Parma ham (in thin slices)
- 80 g grated Parmesan
- 50 g fresh black truffles
Instructions
- 1. Wash the salad thoroughly, remove any damaged or wilted leaves, and then dry it using a salad spinner.
- 2. Mix the vinegar in a large bowl with salt and pepper, add the oil, and whisk until a creamy emulsion forms. Toss the salad in it so that it is evenly coated with the dressing.
- 3. Clean the truffles thoroughly by brushing them, and slice or shave them into very thin pieces. Fold the truffles into the salad, mix everything well, and immediately plate the salad with Parma ham and Parmesan before serving.
